If so, I have a delicious appetizer for you that is also festive in color.
I love anything Caprese style. Salad, sandwich, main dishes…you name it.
Start out with plump cherry tomatoes and…
…hollow them out. I like to use my little pumpkin carver and a mini mellon baller.
Using FRESH mozzarella…
…cut small cubes and place them inside along with a piece of fresh basil leaf.
Prepare your plate by drizzling a little olive oil on the bottom and then go ahead and place the tomatoes on your plate.
The next step is to make a balsamic vinegar reduction.
You will want to bring four cups to a boil in a skillet until it is the consistency of a thin syrup.
Remove from heat and drizzle over your tomatoes. The syrup will get a little thicker as it cools.
Note: four cups will reduce to about 1/2 cup so if you need more, adjust the amount accordingly.
